Here is the latest bar in my house: Chocolate Toffee Bites. I got the recipe from a miniature book promoting baking products from quite a few years ago. These bars are very quick and easy to make. They aren't utterly amazing, but they are pretty good. The base is a shortbread bottom, which isn't very rich and buttery. The proportion of flour to butter is quite high, which made for a firm crust that stayed together, but just wasn't very rich. Also, a problem with many chocolate-topped squares, is that when you try to cut them, the chocolate topping cracks at odd angles. The recipe said to let the squares set in the fridge and then cut them. So I put them in the fridge, but let them warm up a bit before cutting. The chocolate didn't crack as much but it did separate from the bottom a bit. Oh well, still good!
Chocolate Toffee Bites
2 cups all-purpose flour
1 1/2 cups packed light brown sugar, divided
1/2 + 2/3 cup cold butter, cut into pieces
2 cups semi-sweet chocolate chips
Preheat oven to 350◦F. Line a 9x13 inch pan with parchment paper.
In a large bowl, mix flour, 1 cup sugar, and 1/2 cup butter until crumbly. Press into prepared pan. In a small saucepan over medium-high heat, cook remaining butter and sugar, stirring constantly, until it boils. Boil for one minute, pour over crust. Bake 18-20 minutes, remove from oven and immediately sprinkle evenly with chocolate chips. Let stand 5 minutes, then spread carefully. Cool in refrigerator until chocolate sets. Cut into squares.
