Easter Cupcakes

It is almost April already and Easter will be here soon after! To start getting in the spirit, I decorated some Easter cupcakes today! I have three different designs here, all with a white cupcake base. The purple and green ones were made simply by piping purple and green icing on to the cupcakes, and topping them with milk chocolate eggs and colorful candy-coated chocolate eggs. The other design was a bit more complicated, but still quite simple. I iced the cupcakes in plain white icing, sprinkled them with toasted coconut, and placed some candy-coated chocolate eggs on top of the coconut using some icing to stick them together. This makes them look a bit like little nests. Jelly beans would also work well in place of the candy-coated chocolate eggs. Toasting the coconut makes it stand out against the white icing, it also intensifies the flavor a bit. You could also place shredded coconut in a sealable plastic bag and add a few drops of food coloring to make any color you want. Try to use long thread coconut, as it has more of a nest-like appearance. This coconut idea may also be used to decorate cupcakes other ways, such as using yellow coconut to make chick cupcakes, or green coconut to make a flower garden.
