Sweet Apple Chutney

Sweet Apple Chutney
2 liters red onion, diced
1.5 liters apple cider vinegar
1/2 liter raspberry vinegar
1/2 liter apple juice
1/2 liter molasses
1 liter maple syrup
1/2 liter packed brown sugar
4 star anise
6 whole allspice berries
1 Tablespoon whole cloves
2 cinnamon sticks
3 liters green apples, diced

Place all ingredients except the apples in a large pot and bring to a boil. Simmer strongly for a few hours until onions are tender and liquid is reduced and thickened. Stir in the apples then remove from heat. Cool and serve!
