Seafood Linguini

Seafood linguini with white wine cream sauce with chanterelles, cherry tomatoes. beet greens, and fresh herbs.

  • Linguini noodles, cooked al dente (homemade if you are feeling ambitious)
  • White wine chanterelle cream sauce
  • Local mussels
  • Baked cracked pepper brown sugar salmon
  • Local cherry tomatoes
  • Baby beet greens
  • Fresh tarragon
  • Fresh dill

Mussel and Oyster Salad

Course two in the shellfish gala dinner was a salad, composed of: a baked oyster, steamed mussels, granola sand, organic garden tomatoes, capers, vinaigrette, and flowers. There were a few variations on the salad as well, for example seafood-free (pickled chanterelles), gluten-free (no granola).

Skills - Secondary Cooking Mussels

This week I will be featuring some more photos from the Skills competition. I only took abut three hundred food photos! There were many different categories of food - some specific instructions, some different take son the same recipes, and some original creations. 

First off, the day one project for cooking group one competitors - Mussels Provencal. The recipe was provided, but plate presentations were much different, there were a few variations, and each garnish was different.
