Potato Machine Bread

Potato Machine Bread
1 cup warm water
3 Tablespoons olive oil
3 Tablespoons honey
1 large egg, beaten
1 cup leftover unseasoned mashed potatoes, at room temperature
1 1/2 teaspoons salt
3 cups whole wheat flour
2 teaspoons yeast
1/4 teaspoon ground ginger, optional
Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one large loaf, although size setting will depend on machine.

The potato in this bread makes the loaf slightly heavier, but it has a nice flavor and texture and is quite moist. The honey and olive oil also contribute to the flavor and texture of this bread.

Molasses Wheat Machine Bread

1 1/2 cups water
1 1/4 teaspoons salt
2 Tablespoons blackstrap molasses
1 cup cereal mix (see note) 
3 cups whole wheat flour
2 1/4 teaspoons yeast
1/4 teaspoon ground ginger (optional)

Banana Machine Bread

Banana Machine Bread
1/3 cup buttermilk
1 large ripe mashed banana
1 1/2 Tablespoons oil
1 1/2 Tablespoons honey
2 cups whole wheat flour
1 teaspoon salt
1 1/4 teaspoon yeast
1/4 teaspoon ground ginger (optional)

Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one small (one pound) loaf, although size setting will depend on machine. 

You can even make banana bread in a bread machine. Though perhaps no easier, this is a yeast banana bread that has a sturdier texture and makes delicious peanut butter sandwiches.

Honey Oatmeal Machine Bread

Honey Oatmeal Machine Bread
1 1/2 cups water
1 Tablespoon oil
2 Tablespoons honey
1 teaspoon salt
scant 1/4 cup skim milk powder
1/4 cup oats
2 Tablespoons wheat germ
2 1/4 cups whole wheat flour
2 teaspoons yeast
pinch ground ginger (optional) 
Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one small (one pound) loaf, although size setting will depend on machine. 

When I made this the flavor was good, but the dough was a little too liquidy, more like a batter bread. I tried to save it with more flour, and the flavor was good, the rise just wasn't as great. Here is the revised recipe, which should work fine, but keep an eye on it during the mixing cycle. If it's still too liquidy, add a little extra flour. This is a hearty, tasty bread.

Chewy Grain Machine Bread

I thought I would take a little break from my trip posts to feature something I have made. The first thing I have baked since my return was, of course, bread. I ran out of my stock of bread for sandwiches! This is a simple machine bread that is foolproof and really quite tasty.

Chewy Grain Machine Bread
1 cup milk
2/3 cup water
2 Tablespoons oil
2 Tablespoons honey
1 teaspoon salt
3/4 cup grains of choice or cereal mix (one single grain such as oats or flax, or a combination will both work)
3 3/4 cups whole wheat flour
2 1/4 teaspoons yeast
1/2 teaspoon ground ginger (optional)

Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one large loaf, although size setting will depend on machine.

1 cup + 2 Tablespoons water
3 Tablespoons oil
3 Tablespoons molasses

1 1/3 cups old-fashioned oats
2 2/3 cups whole wheat flour
1/2 teaspoon ground ginger (optional)
2 1/4 teaspoons yeast

What better bread flavor than the classic molasses oatmeal? This is a darker loaf with a color rich in molasses and whole wheat flour. It is a fluffy bread with a little more substance to it due to the oats. It is a nutritious, sturdy breakfast or sandwich bread.

1 1/3 cups water
2 Tablespoons oil

1/2 cup ground flaxseed
2 1/2 + 1/3 cups whole wheat flour

Multigrain Machine Bread

Multigrain Machine Bread
1/4 cup each: ground flaxseed, oat bran, natural wheat bran, and wheat germ
1/2 cup oats
1 cup warm water
1 large egg, beaten, at room temperature
2 Tablespoons oil
2 Tablespoons honey
1 teaspoon salt
grain mixture from above
1 1/2 cups whole wheat flour
1 teaspoon ground ginger
1 1/2 teaspoons yeast
Mix together the grains and oats, set aside. Place all ingredients except in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one large loaf, although size setting will depend on machine. 

This is a bread machine recipe I came up with myself that truly combines all my favorite hearty grains. Some may find this bread a little bit heavier or dense, but it is certainly a nutritional powerhouse, and is meant to be sliced quite thinly. To ensure the bread rises better, as multigrain breads do tend to contain less gluten, a tablespoons or two of wheat gluten may be added along with the flour.

Huge Cinnamon Bread

What happens when your bread rises really high? Well, you start to worry as to whether the force of the rising bread will blow off the lid of your new bread machine. And everyone told me you didn't need physics in baking. Anyway, the bread definitely wasn't strong enough to cause the lid of the breadmaker to come off, but we were wondering if the machine would be able to contain this huge dough. I am not sure why this bread rose so high this time, as we have made this recipe before. (See {Machine Cinnamon Swirl Bread}) As you can see, this bread is very tall and rectangular. The only problem with bread rising this high (besides not fitting in a breadmaker) is that there is that the proportion of bread to cinnamon swirl is too large, and the bread seems a bit more plain and dry. Other than that though, it is still an extremely good recipe - tasty, convenient, and so pretty. Almost as good as the made-by-hand old-fashioned version.

Multigrain Raisin Bread

This is a tasty twist on cinnamon raisin bread. It is definitely healthier as it is 100% whole grain. This does make the bread a bit heavier, but that way it is satisfying. This isn't a sweet, snack-like raisin bread, but more of a hearty sandwich bread enriched with some raisins.
Multigrain Raisin Bread
1 1/4 cup water
3 Tablespoons honey
2 Tablespoons oil or softened butter
1 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup multigrain mix (I use this:{Hot Cereal Mix}) 
2 cups whole wheat flour
1/2 teaspoon ground ginger
1 teaspoon yeast
3/4 cup raisins

Place all ingredients except raisins in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. Add the raisins when the mix in signal chimes. This makes one large loaf, although size setting will depend on machine.

Cereal Machine Bread

Can't decide between bread and cereal for breakfast? Have both in one with this healthy, homey bread.

Cereal Machine Bread
1 1/3 cups warm water
2 Tablespoons oil
2 Tablespoons moalsses
1 teaspoon salt
1/2 cup cereal* (see NOTE)
2 1/2 + 1/3 cups whole wheat flour
1/4 teaspoon ground ginger (optional, to promote rising)
1 1/2 teaspoons yeast

Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one large loaf, although size setting will depend on machine. 
*NOTE: This recipe uses 1/2 cup of a hot cereal mixture. You can easily use a commercial mix - any multigrain mix should do, as long as it is a HOT cereal mix that cooks relatively quickly (think microwave and not awhile on the stove). Plain oat bran or oatmeal may be used as well.
For this recipe, I used my own homemade hot cereal mixture that I keep on hand, which contains oats, oat bran, wheat germ, flax, and wheat bran. The recipe can be found at this link: {Hot Cereal Mix}.

Rustic Bread Machine Brown Bread

Another bread machine recipe. This recipe has a standard healthy mix of whole grains, but they could be switched up a bit. It is a pretty forgiving recipe - I had it in the bread machine for awhile and I was wondering why the machine hadn't beeped to tell me to remove the kneading paddle. Then I realized I had accidentally unplugged the machine instead of the other appliance I had meant to unplug. It had been unplugged for awhile, so the machine could not resume it's cycle. But since it had sat so long, the bread was well risen. I removed the paddle and baked it, and it still rose very well and turned out just fine! It's funny because I thought I had double checked to ensure I was unplugging the correct machine. Oh well, another lesson learned, and thankfully nothing wasted.

1/4 teaspoon ground ginger

I call this cute whole wheat machine bread as it only makes a small loaf, as opposed to the usual two pound loaves I make. It is small and perfectly round, and just a good basic homemade whole wheat bread recipe - very quick and easy.

1 cup warm water (30-40C)
1 large egg, beaten
2 Tablespoons butter or hard margarine, softened
2 Tablespoons honey
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 cup oats
2 1/2 cups whole wheat flour
1 1/4 teaspoons yeast
Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one large loaf, although size setting will depend on machine. 

This bread rose really high considering it is a whole wheat loaf with the addition of old-fashioned oats and no added gluten. I think its success can be attributed to the small amount of ground ginger I added along with the cinnamon. I read in my bread maker's manual that a pinch of ginger, not even enough to change the flavor of the loaf, will promote rising. Garlic on the other hand, inhibits rising. I think I'll add a little ginger to all my loaves from now on. It certainly can't hurt!
This may be the best loaf I made yet - large, light, fluffy, with a nice hit of honey flavor!

Machine Country Seed Bread

This is a bread machine recipe that I made a very similar version to in the traditional way once upon a time. It has a nice texture and flavor due to the added seeds and a nice crispy crust. I decided to try making a small loaf this time, but I discovered I would much prefer the large loaf setting. It is the same amount of work, but makes a larger loaf that rises better, forms better sandwiches, and lasts longer.  

Machine Country Seed Bread
3/4 cup warm water
1 teaspoon salt
4 teaspoons vegetable oil
4 teaspoons honey
2 cups whole wheat flour
3 Tablespoons ground flaxseed
4 teaspoons sesame seeds
2 teaspoons sunflower seeds
1 1/4 teaspoons yeast

Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle, small loaf.

Good and Grainy Machine Bread
1 cup water
2 Tablespoons hard margarine
2 Tablespoons honey
1 teaspoon salt
2 1/3 cups whole wheat flour
1/2 cup oats
1/4 cup natural wheat bran
3 Tablespoons skim milk powder
1 Tablespoon ground flaxseeds
1 1/2 teaspoons yeast

Place all ingredients in bread machine pan in order given, or according to manufacturer's instructions for whole wheat cycle. This makes one large loaf, although size setting will depend on machine. 

This bread has a good dose of healthy whole grains, therefore it will not rise as high as a whole wheat or white loaf would. Add a little wheat gluten if you would like a higher rise. Skim milk powder is used in this recipe to avoid using perishable milk. It is also easier because skim milk powder is stored at room temperature unlike fluid milk, and this is more cost efficient.

Machine True Whole Wheat Bread

This is the whole wheat bread recipe that came with my bread machine book. I think it's the best recipe I have made in my new bread machine yet. The appearance was rather uneven on the outside, but it rose very well and was extremely tasty. The texture was crusty on the outside and soft and fluffy on the inside. Bread machine (and some traditional) recipes calling for heavier flours such as whole wheat, rye, and other whole grains often call for the addition of a little bit of wheat gluten, as these flours tend to be denser and contain less gluten. Wheat gluten is pricey and can be tricky to find, but only a small amount is used in most recipes and it is apparently completely worth it. It can be omitted in a pinch, and since I didn't have any on hand, I left it out in this recipe. Well, the bread still rose very well (it may have rose over the pan if I had added the extra gluten), and personally I think there is enough gluten around without purposely adding extra, so I probably won't be buying it anytime soon. However, for last minute bread machine loaves, wheat gluten is vital.
