Garlic Dill Toasts
day old baguette, thinly sliced on the diagonal
salted butter
minced garlic
fresh dill springs
cracked black pepper
If you plan ahead, soften the butter then blend with the garlic, dill and pepper and spread on the baguette.
If not, just melt the butter, stir in garlic, dill and pepper and brush on the baguette.
Then toast in the oven until crisp.

- Homemade garden tomato and herb broth
- Reduced cream
- East coast cod fish pieces
- Fresh local cherry tomatoes, baby carrots, yellow beans, celery

Garlic Herb Butter Toasts
Garlic Herb Butter
2 pounds salted butter, softened
1/4 cup minced garlic
1/2 cup chopped fresh cilantro
1/2 cup fresh dill
cracked black pepper, to taste
Blend or cream all ingredients together until smooth.
For toasts: spread slices of bread (I used day old baguette) liberally with butter and toast until crisp.
This butter can also be used as a sauce on steaks or for basting fish in a pan, or spread on warm bread, or a variety of other uses.

lobster meat pieces, finely diced
lemon zest
tarragon
salt
pepper
goat cheese
cream cheese
cheddar and/or parmesan cheese, if desired
Mix all together well and spread on lengths of day-old baguette. Toast in the oven until hot and melty and golden.

- Ravioli - fresh, hand-rolled, homemade pasta dough
- Lobster Filling - local lobster, goat cheese, lemon, tarragon
- Chanterelle Cream Sauce - butter sauteed local wild chanterelles, redued cream
