Awards 2014

Here are the results from the exhibition baking competition. I placed second overall, therefore received a nice basket full of goodies, including a cookbook, oven mitts, chocolate bar, tea, chocolate chips, ground ginger, baking pan, measuring cups, and more. I also received a ribbon for my award-winning chocolate cake yet again, for the best in entry in the cakes and squares section. The only thing I am a little disappointed in is that I did not receive a rank for a few of my items, because I did not realize the recipe had to be included as well, as in the gluten-free items. Oh well, these items are still on display and I still placed quite well despite this.

Cooking Competition 2014

I am preparing baked items for the local exhibition baking contest again. This is my fourth year competing, and this year, I have chosen twenty-four different items to enter. That is the most I have ever done. I was very busy over a few days baking, but I also prepared some items in advance and froze them, since I knew I would never be able to bake that much in two days, not with my busy schedule anyway. Best of 2013

It is the end of another year, which is a time when I like to reflect upon all of my accomplishments of the year. Below I have provided a list of my top five posts from each month. These are posts I feel were either the tastiest, the most difficult yet successful, the most popular, or the most presentable. It is no coincidence that yet again, many of them are cakes and cupcakes, which are my most impressive showpieces. Also the majority of them are desserts, mostly chocolate. I guess that is what I like to make the most!

Christmas Baking Begins

It is now December, which means my mother began her Christmas baking the other day. She always begins way before me, and we enjoy some cookies hot from the oven, then she packages and freezes the rest. We use them to send to neighbors, to serve to company, and to enjoy the leftovers ourselves into the new year. I do most of my baking closer to Christmas and tend to serve the baked goods fresh. This is because my mother makes mostly different types of Christmas cookies, and of course I cannot forget her delicious chocolate fruitcake. I tend to make other items such as Panettone, my Christmas fruit bread, and pudding - figgy, sticky toffee, etc., and sometimes a Christmas cake. 

My mother has her classic, tried-and-true recipes she stands by and makes each yea. She also likes to try one or two new recipes each year, which sometimes become new family favorites and replace old ones. I have provided the links to the different goodies below, some have a recipe included, but some are family stand-bys and do not. Sorry!

Each year we have:  Gingerbread People, Gingerbread Cookies, Kiss Cookies, Button Cookies, Shortbread Cookies, Chocolate Shortbread Cookies, Sugar Cookies (though these aren't the Christmas version here, they are pictured below and are the same recipe) Chocolate Fruitcake, Shreddies Mix.

Other Christmas cookies I have made throughout the years include:  Iced Ginger Cookies, Chrismtas Checkerboard Cookies, Ginger Crinklesand Candy Cane Biscotti.

Exhibition Flops

It is almost inevitable when one is trying to bake large quantities as quickly, as accurately, and as professionally as possible for a special competition that something, or several things, will go wrong. Usually I experience a few small pitfalls, despite all my prior planning and organization, not everything can run smoothly. But I had a quite funny experience my fist year entering this competition.

I was making my signature chocolate cake. I had made this cake recipe many times before, and it had always turned out perfectly. This time I decided to halve the recipe because I only needed three pieces, and not two whole cakes. I am not sure if I did not halve the recipe correctly, or what exactly happened, but it did not work out. I had put the cake in the oven to bake, and things seemed to be going smoothly, but then I began to smell toasted marshmallow. It didn't smell bad or burnt, so I figured someone was having a campfire. Then, when it came time to check on my cake, I came across quite the surprise! The cake had overflowed from the pan, and spilled onto the oven rack and floor. That's what was burning, though I am not sure why it smelled like marshmallow. The rest of the cake seemed to have survived ok. I was much more concerned about the mess I had left in my parent's oven than with the condition of my chocolate cake. Surprisingly, they weren't upset and it wasn't too difficult to clean once it cooled down. My brother was also happy to eat the cake. He said it tasted fine, and I could have probably entered that cake in the exhibition no problem, but I whipped up another (full) batch the next day. Then we ended up with a lot more cake then we had bargained for. 

These things happen. That is why I plan ahead, and begin baking crucial or time-consuming items the day before. That way I can re-do them the next day, if needed. Even tried and true recipes do not always turn out perfectly.

Awards 2013

Here are the results from the exhibition baking competition. I received a placement for each of the sweets I entered and I placed fourth overall. I received a nice gift basket, that appears to have an Italian theme - it includes a pasta cookbook, pasta, manicotti shells, pasta sauce, vegetable broth, and a sauce mix. This is certainly a nice fit with my Italian heritage. Once again this year, my chocolate cake placed first - it really is the best! My mother's awesome chocolate zucchini loaf placed first again as well. The other items I have not entered before, but my vanilla cake won first too. My two heritage recipes also earned top prizes. I am a little surprised with the placement of my lemon squares and chocolate coconut squares, which both got rave reviews from family and friends. Oh well, at least they are popular among us. I am quite pleased with my winnings, especially considering I am competing with breads and preserves for a top place, neither of which I have entered.

Exhibition Preparation

Once again, it is the time of year where the local exhibition is in town. That means there is a home cooking and baking competition and I am busy baking up a storm to enter many of my items. The process of baking, packaging, and delivering the items all happens mostly within the span of a two-day period; the baked goods have got to be fresh. However, planning beforehand does take some time, and I try to do this as early as possible in order to get as much accomplished as I can and reduce my workload for the two days before the competition. This involves getting the entry form and deciding which items I am going to bake. There are approximately eighty different categories I could enter, but there is no way I would be able to bake that much in two days. I know I am not the best at making breads, jams, or pickles, and these items are all quite time-consuming, so I eliminate those categories right away. But there are still many cakes, and squares, and cookies, and pies to choose from. So I choose what I believe I am the best at, and what I know I have great recipes for. I also try to choose recipes that are, for the most part, quick and easy, as I want to bake as much as I can in a short amount of time. 

Before baking begins, I also write up all of my tags for the entries, gather my recipes together, organize my supplies, and make a grocery list and purchase ingredients.  I certainly don't want to run out of something in the middle of baking, and lose precious time running to the store, so I make sure I have plenty of everything.

Then when it comes time to bake, I grab the recipe from my stack, bake the item, cool it properly, and package and tag it to be displayed on a paper plate in a plastic bag. Then I place it in a safe place, and make sure everyone knows the leftovers are there for eating, not the ones on the plate! I try to bake things in a logical order, to make best use of oven time, and bake things like cake and bars the day before, to be cooled properly before cutting, and bake items that need to be the freshest or are the least stressful the day of. 

Leftovers, there are usually a lot of them, though I try to make small batches. I end up freezing a lot of them, sharing with my family, or giving away to friends. But of course, these are all family favorite recipes, and every item needs to be tasted before I enter it!

Raving Reviews

I love baking for others. I love sharing my talent, my creations, and my joy of baking with others. Sure, sometimes it gets a bit annoying when you can't pack your baked goods in your lunch and enjoy them without others eyeing them or asking for some, but as annoying as this is, it is also flattering, and often I don't mind sharing (especially if there is something in return). As much as I enjoy baking for myself, I enjoy baking for others. I make many things that my family members acknowledge, but won't touch, such as all my whole grain breads and cereals. I am not sure how others outside of the house would feel about these, as I have never offered, but I have shared all of the recipes on here (they don't sound too bad, right? If you like that kind of thing...). So I bake a lot of things for myself, but most of my sweets are designed to cater to my family or friends or neighbors or other functions. Those s'more bars are a good example, I baked those as a gift for secretary's day. Of course, being a large pan of squares, we got to keep some as well (I have to try them and make sure they are good before I send them off). These squares were greatly appreciated, and i absolutely love hearing comments like, "These are the most delicious squares ever!" And, "If you keep baking like this, you definitely have a future in it!" All of these types of comments inspire me to continue baking, to try more ambitious and fancy recipes, and to continue to share my love of the art with others. Thank you for the praise! And remember, I accept negative feedback as well, it helps me improve.

Baking Soda & Baking Powder

Baking soda and baking powder are both chemical leavening agents, they make baked goods that rise in a short amount of time in the oven. Unlike yeast, which is a fungi and needs time to ferment in order for baked goods to rise, chemical leaveners do not need time to ferment, they simply enlarge air bubbles present in the batter due to the creaming of ingredients. Both baking soda and baking powder are composed primarily of sodium bicarbonate, but baking powder also contains added cream of tartar. You can even make your own homemade baking powder from baking soda, by mixing two parts of cream of tartar to one part of baking soda. Sometimes an equal amount of cornstarch to baking soda is added to absorb any unnecessary moisture in the batter so no reactions take place before a liquid is added.

Baking soda is used alone when an acidic ingredient is present in the batter. These ingredients include vinegar, citrus juice, cocoa, buttermilk, sour cream, and yogurt. The sodium bicarbonate and the acid react when mixed, producing many bubbles (think of baking soda dissolved in water). Baking soda is generally used in batter that is to be baked immediately and at lower temperatures for shorter baking times, such as pancakes and cookies. Too much baking soda leaves a soapy taste and coarse texture in baked goods. It also turns batters with cocoa slightly red, which is where Devil’s Food Cake came from. Baking soda can be stored indefinitely, and is also useful for many other household needs, such as cleaning and deodorizing.

Most baking powders are double-acting, meaning reactions take place in two stages. The first stage occurs when the baking powder is moistened with liquid in the batter. The second stage occurs in the heat of the oven when the gas bubbles begin to expand. Baking powder can be used at higher temperatures for longer amounts of time, such as muffins and biscuits. Too much baking powder in a batter can result in a bitter taste and tough texture, as well as a quick rise and collapse. Baking powder loses its effectiveness after a year or so.

You can sometimes use baking powder in place of baking soda, but not vice versa. A combination of baking powder and baking soda (usually the majority being powder) is often used in baked goods that are baked at a high heat or for a long time, but also contain an acidic ingredient, such as cakes and loaves. Always measure baking powder and baking soda precisely, and use the one called for in the recipe, otherwise the results may be disappointing.

Cooking Competition

Here are the results from the home cooking competition I entered at the local exhibition. I was also awarded fourth overall exhibitor, for which I received a basket full of goodies, including ingredients and baking equipment. This basket seems to be perfectly suited to me because it contains cocoa, chocolate chips, and a muffin tin that is formed to make animal shaped muffins. It looks super cute and I cannot wait to use it! I was also awarded a ribbon for my first place chocolate cake, which means it was the best entry in the Cakes And Sweets category, which included ten different sections. I am quite happy of my winnings, especially considering there seemed to be more entries this year than last year, preserves are included in the point accumulation, and I did not do preserves while many others did, and most of my competitors have many more years of experience than I do.  Points are awarded for each award, higher points for a first place win and lower points for a third place win. Then the points are added up to determine the overall top exhibitors. Here's how my entries placed:

Baking & Entering

The past few days I have been very busy baking up a storm. I have entered a bunch of my baked goods in a local baking competition at the exhibition. I competed in this for the first time last year, and I was quite pleased with the results. I entered five different items twice, each in the junior and the senior category since I qualified for both. I placed either first, second, or third with every item in both categories. The results of last year are posted in my entries from September 1st and 2nd, 2011. This year, I qualify for both the junior and senior categories again, so I will be entering five of the same items in both, along with two additional items in just the senior category and three additional items in just the junior category. The junior and senior categories do not contain the same listing of baked items, and the senior has a lot more selection, which is why I am baking a few individual junior and senior items. However, since many items overlap, I chose many of those, since this way I only need to bake the item once but can enter it twice. 
So lately I have been busy baking, frosting, decorating, slicing, packaging, and labeling my baked goods. I haven't featured many of these items on the blog because they are mostly tried and trued recipes I have made before, so they have already been featured on the blog before. I also had a few things stored in the freezer that I will be exhibiting, to save time and some baked items actually benefit from a short time in the freezer (and some certainly don't). All items need to be sliced to perfection, just the right size and shape. Then they need to be placed on paper plates in plastic bags and tied up and labeled. It's all a little bit time consuming, and a bit tedious to ensure everything looks perfect, but the baking part is certainly fun and it all pays off. This year I have fifteen separate entries, composed of ten different baked items, because five of the items are being entered twice into both the junior and senior categories. Here is a picture of all of my entries, sliced, bagged, labeled, and ready to go. I will have the results tomorrow!

Cookie Baking Tips

Cookies are easy, relatively quick, and delicious little bundles of joy! They can be anywhere from simple no-bake to elaborate rolled and filled cookies. Drop cookies are excellent recipes for beginner bakers to try. Rolled and cut-out cookies are fun to make for holidays and special occasions. Filled and iced cookies are great for fancier occasions and parties. Whatever type of cookies you want to make, here is a basic list of tips that should help every type of cookie turn out delicious.

  1. Start with room-temperature ingredients. Room temperature ingredients are the best for baking, so take butter, eggs, and milk out of the fridge a half hour or so before starting.
  2. Make sure butter is properly softened. If a recipe calls for softened butter, make sure it is thoroughly soft before using. Do not use the microwave to soften butter, as it yields uneven results.
  3. Cream butter and sugar together well. If a recipe states to cream the butter and sugar until light and fluffy, this step will take a couple minutes by machine and several minutes by hand. Ensure that it is done properly for the best texture and rise in cookies. Also make sure that any eggs and vanilla are thoroughly incorporated as well.
  4. Chill dough if needed. For most rolled and cut-out cookies, and drop cookies with a particularly sticky dough, the dough must be chilled for several hours before baking. This is often done right in the mixing bowl, or the dough is separated into disks and wrapped with plastic wrap. Allow dough for rolled cookies to warm up slightly if too stiff to roll.
  5. Flour any rolling surfaces, rolling pins, cookie cutters, and hands that will contact these cookies to prevent sticking.
  6. Bake only one tray of cookies at a time, in the center rack, to prevent uneven cooking or burning.
  7. Check the cookies after the minimum baking time and every minute after. They are usually ready when they are just set, can be lifted without breaking, or are slightly brown on the bottom.
  8. Make sure cookie sheets are thoroughly cooled before placing another batch of cookies on to them bake. This prevents the cookies from spreading.
  9. Do not grease the pans unless a recipe calls for it. Lining pans with parchment paper is a very good and convenient idea. This way, sheets of cookie dough can be prepared in advance and just slipped onto a baking tray to bake. A particularly good idea if you don't have many cookie sheets. It also eliminates the worry of cookies sticking, and cleanup is a breeze.
  10. Transfer cookies from the baking sheets according to recipe instructions. Some say immediately to prevent sticking, some say wait a few minutes for the cookies to set. Cookies should be transferred to a wire rack or a plate with a spatula to cool completely before storage.
  11. Store cookies in an airtight container or a sealed plastic bag. Many cookies can last up to a week at room temperature, freeze for longer storage. Store different types of cookies in separate containers.
  12. Cookies should be completely cool before frosting or filling. However, sprinkles and hard candies may be placed on cookies before baking.

The Start Of Christmas Baking

Tomorrow marks Remembrance/Veterans Day, and following that, stores and businesses will be hauling out and displaying their Christmas decorations, if they haven't already! Christmas is by far the holiday that is celebrated and prepared for the earliest. It is still 45 days away! Christmas shopping begins, and so does Christmas baking. Many people bake large batches of a variety of baked goods for their Christmas guests (and themselves, too). It is a very smart idea to start early, so you don't get caught up in the last minute Christmas rush. Freezers are the prime tool for this job. Most cookies, squares, muffins, and cakes hold up well for a month or so in the freezer if properly wrapped, even iced and decorated goodies! Fruitcakes and panettones on the other hand, can be made now, wrapped tightly, and stored in a cool, dry place to "ripen" for improved flavor. Many Christmas candies can also be made now and stored at room temperature, as can jarred goods such as jellies, jams, relishes, and marmalades.  Homemade dry mixes, such as cakes, cookie, muffin, biscuit, and got chocolate mixes, are very much appreciated as gifts. I have even given a dry mix for a mushroom risotto dish, which turned out really well. This way, people who are busy or inexperienced in baking can quickly and easily enjoy homemade goods. Other great gift ideas include themed baskets, such as a hot chocolate theme filled with hot chocolate dry mix, mugs, candy canes, and marshmallows; or an Italian inspired basket, with a risotto mix, dry pasta, an Italian cookbook, jars of pasta sauce, and some Italian-themed oven mitts.  Freshly prepared homemade casseroles, breads and soups also make great gifts for earlier in the Christmas season.
 I plan to start preparing my Christmas gifts and baked goods very soon, and my mother has already made her fruitcakes. Happy Holidays!
