Here is layer three of the brookies I will be making. The second layer is simply cream-filled chocolate wafer sandwich cookies.
Brookie Cookie Layer
1 cup butter or hard margarine, softened
1 cup packed light brown sugar
1/2 cup granulated (white) sugar
2 large eggs
1 Tablespoon vanilla extract
2 3/4 cups all-purpose (plain) flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips
In a large bowl, cream together the butter and sugars. Beat in the eggs and vanilla. Stir in the flour, baking powder, baking soda, and salt, then the chocolate chips.
For brookies, spread this dough evenly and carefully over the oreo and brownie layer.
Bake for 45 minutes at 350◦F until cookie dough is cooked through.
For cookies, drop dough by teaspoons onto a cookies sheet and bake at 350◦F for 8-10 minutes, until set and lightly browned, depending on size.
