Banana Oat Muffins
1 cup all-purpose flour or whole wheat flour
1 cup rolled oats
2/3 cup granulated sugar
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
2 cups mashed banana (5-6 bananas)
1/3 cup melted butter
1/2 cup chopped nuts (optional)
Combine first six dry ingredients in mixing bowl. Mix well. Beat egg, banana and melted butter together until smooth. Add banana mixture to dry ingredients. Stir until just moistened. Stir iin nuts, if desired. Fill greased muffin cups 3/4 full. Bake at 375◦F (190◦C) for 20-25 inutes, or until top springs back lightly when touched.
